I am always on Pinterest looking for new things to craft or cook. To be honest I pin so many things and forget about them. I am a chronic pinner!
Recently I had to find something for dinner and I was drawing a major blank. I decided that since I pin everything I would look on one of my boards. I came across one that I had all the ingredients for.

Once I got everything out, I realized that I would be following the recipe but also not really be following it. I tend to always basically just roll with the flow of my kitchen. Having a toddler throws prep times out the window. I do believe that I did fairly well even with a toddler.
First I got all of the ingredients out. Also you will realize throughout my cooking process that I don’t really follow measurements.
Preheat oven to 400 degrees F. And place aluminum foil in your pan.

Take out as many carrots as you would like to cook. The number won’t affect cook times. I have chosen to only cook about two handfuls, the Marine won’t eat carrots so I don’t need them going to waste. The toddler is still skeptical about them too. Anyways, cut the ends off and halve them.
Next, take out a few potatoes. *I don’t like to have leftovers* I used red potatoes which tend to vary in size. Wash and dry them. Then cut into chunks, try to keep them around the same size to ensure they cook the same amount of time.
Step 3 is to prep your chicken. Rinse off your pieces. *I only defrosted 4 pieces because I have them prepackaged that way to ensure no food is wasted.* Take the brown sugar and coat the chicken. I used a lot of brown sugar and also tried to put under the skin. This will make the skin nice and crispy.
Now you will be putting everything in the pan to bake. First put the potatoes and carrots in, drizzle olive oil over and evenly coat them. Next, place the chicken on top. Finally sprinkle the ranch packet all over everything. *I did have to lift the chicken to get the ranch on the veggies underneath.* I do want to add that I sprinkled salt and minced garlic over everything at this time too.
Bake 25 minutes then broil 3 minutes.
